Fresh Market Recipe Feature Story – Tracie Smith

If you have ever attended Thunder Bay Regional Health Sciences Centre’s Fresh Market, you would have seen the wide variety of seasonal recipes available to staff, patients, families and visitors. Each week, staff in Prevention and Screening Services at our Hospital provide healthy recipes which coordinate with weekly ingredients sold at our Market. The recipes are simple, healthy and delicious! Last week’s feature recipe from the Fresh Market was titled, “Easy Shakshuka with Feta”, which included eggs, yellow and red bell peppers, and spices, all which can be found at our Market.

Tracie Smith, Senior Director of Communications and Engagement attended the Market and after seeing the Shakshuka recipe posted on the employee daily newsletter (iNformed), was able to buy most of the ingredients for her dinner that night. She even stepped it up and used fresh tomatoes from DeBruins’ Greenhouse, instead of buying canned tomatoes as suggested in the recipe.

There will be a new recipe feature every week in addition to a number of other ones provided at the Prevention and Screening booth at the Fresh Market. If you have a Fresh Market recipe that you have tried and want to share a photo or a story, please email them to mastersv@tbh.net.

Our Hospital Fresh Market runs every Wednesday from June 20 – October 3 from 11:00 am – 1:00 pm in the cafeteria courtyard.
